for me M 51 is the most stunning Galaxy that we can observe. I love the perfect spiral structure that easy visible. That Galaxy looked really impressive during a night in march with very good transperence on the Hohe Geba (a mountain in Germany) I have use my 10" Telescope with 125x. Here is the Sketch:
